Bia là một ngành, mà so với các ngành có yếu tố sản xuất khác của Việt Nam, thì có tuổi đời khá sâu, khoảng hơn 120 năm tuổi. Giống như báo chí, ngân hàng, các trung tâm hoạt động nghệ thuật, hộ chiếu, bánh mì, đồ ăn nhanh hay ngoại ngữ… bia là một trong số những điều rất thú vị và mới mẻ mà người Pháp đã mang đến Việt Nam vào cuối thế kỷ 19; trong hành trình đặt nền móng, tạo ra những thói quen, tập quán, lối sống, quy chuẩn cho những đô thị hiện đại; mà khởi đầu từ Sài Gòn, Hà Nội.

Mặc dù bia là một trong các đồ uống lâu đời nhất mà loài người đã tạo ra, có niên đại ít nhất là từ thiên niên kỷ thứ 5 trước công nguyên và được ưa chuộng khắp thế giới nhưng bia lại mới chỉ có mặt chính thức ở Việt Nam năm 1875, từ một xưởng nhỏ do ông Victore Larue, một người Pháp lập ra tại Sài Gòn bấy giờ. Sau này năm 1910, xưởng này phát triển thành một nhà máy hoàn chỉnh sản xuất bia, nước ngọt và nước đá trước khi chính thức sáp nhập vào hệ thống BGI của Pháp năm 1925. Năm 1977, sau khi miền Nam hoàn toàn giải phóng, nhà máy này được công ty Bia Rượu Miền Nam quản lý và đổi tên thành Nhà máy bia Sài Gòn, bước sang một thời kỳ phát triển mới. Và cho tới bây giờ, nơi này được biết đến là Tổng công ty cổ phần Bia Rượu Nước giải khát Sài Gòn (SABECO).

Cũng có những luận án tiến sĩ về thị trường bia Việt Nam lại chỉ ra rằng rằng nhà máy bia đầu tiên được hình thành ở Việt Nam do một người chủ tư bản Pháp xây dựng ở Hà Nội vào năm 1890. Bia được sản xuất lúc này nhằm đáp ứng yêu cầu của quân đội và kiều dân Pháp ở Việt Nam, phục vụ những công chức Việt Nam tại một số thành phố lớn miền Bắc. Nhà máy này ban đầu mang tên một người Pháp là Hommel, sản xuất chỉ 150 lít/ngày và do 30 người lao động do Pháp đào tạo. Năm 1954, khi miền Bắc Việt Nam được giải phóng nhà máy bia được đổi tên là nhà máy bia Hà Nội nay là Tổng công ty cổ phần bia – Rượu – Nước giải khát Hà Nội. Sau này một nhà máy thứ hai mới được hình thành ở Sài Gòn.

Dù có nhiều tài liệu đề cập đến chuyện đâu là đơn vị sản xuất bia đầu tiên, nhưng có thể nhìn nhận tổng quan rằng bia vào Việt Nam theo người Pháp từ những năm 1870s và trước tiên là ở hai đầu Nam – Bắc. Thời kỳ đầu thiết bị rất thô sơ và lao động gần như làm việc thủ công.

Từ năm 1975 ngành bia đã thống nhất toàn quốc.

Trong suốt thời kỳ bao cấp (1976 – 1986), thị trường bia chưa được hình thành theo đúng nghĩa của nó: quy mô nhỏ bé, tính chất bao cấp nặng nề. Trong cơ chế quản lý kinh tế tập trung thời kỳ bao cấp nhà nước độc quyền sản xuất tiêu thụ rượu bia, bia khi đó được coi là hàng hoá xa xỉ, chỉ có một bộ phận nhỏ dân số được dùng bia. Việc sản xuất và kinh doanh bia chỉ có ở các cơ sở của Nhà nước.

Bia là mặt hàng mà không phải ai muốn là cũng có thể sản xuất và kinh doanh được. Thứ nhất bởi vì bia có đặc điểm giống như mọi thứ hàng thực phẩm để lâu có thể bị lên men, vì vậy việc sản xuất bia luôn phải gắn với khâu tiêu thụ. Thứ hai việc bảo quản và vệ sinh bia cũng giữ một vị trí quan trọng bởi sẽ ảnh hưởng trực tiếp đến chất lượng của bia. Hệ thống kho chứa và bảo quản bia phải mang tính chuyên dụng và tốn nhiều chi phí để đầu tư, vận hành.

Mỗi loại bia đều có đặc trưng của nó về màu sắc, hương vị, độ bọt, độ trong của bia. Những đặc trưng đó được quyết định chủ yếu bởi quy trình công nghệ và máy móc thiết bị sản xuất ra nó. Bia hơi thường được đóng trong thùng 50 – 100 lít; khi sản xuất ra thường phải được tiêu thụ ngay trong ngày. Cơ sở sản xuất có hệ thống máy móc thiết bị cũ, lạc hậu thì quy trình sản xuất dài hơn, với bia hơi cần 20 ngày trong khi nhà máy bia hiện đại sau này chỉ cần 12 ngày. Khác nhau là ở quá trình lên men từ giai đoạn lên men sơ bộ đến lên men chính và cuối cùng là lên men phụ. Quy trình càng lâu thì cơ sở càng kém chủ động trong cúng ứng bia ra thị trường, nhất là trong các tháng cao điểm nhu cầu cao.

Việt Nam nhập khẩu 100% nguyên liệu chính để làm bia như malt, hoa bia và một số chất phụ gia trong thời kỳ này.

Bia Việt chỉ thực sự phát triển khi có những chủ trương đổi mới trong nền kinh tế quốc dân, tức là khoảng sau 1986. Trong điều kiện mới của nền kinh tế Việt Nam sau mở cửa, đời sống của các tầng lớp nhân dân có những bước cải thiện quan trọng, lượng khách du lịch, các nhà đầu tư vào Việt Nam tăng nhanh, càng thúc đẩy sự phát triển của các ngành kinh tế. Do đó, chỉ trong thời gian ngắn, ngành Bia Việt Nam đã có những bước phát triển quan trọng, thông qua việc đầu tư, khôi phục sản xuất của các nhà máy bia sẵn có, mở rộng đầu tư liên doanh với nước ngoài và xây dựng thêm các nhà máy bia của các địa phương, Trung ương, tư nhân và cổ phần trên phạm vi cả nước. Ngành sản xuất kinh doanh bia phát triển chưa từng có bởi đang ở trạng thái độc quyền chuyển sang trạng thái cạnh tranh quyết liệt. Thời gian này có nhiều thành phần kinh tế tham gia sản xuất kinh doanh bia và bia đã trở thành nước giải khát phổ biến.

  • Từ 1985 đến 1996, trong hơn 10 năm, thị trường Việt Nam bùng nổ nhu cầu sử dụng bia. Tính tổng sản lượng bia các năm cộng lại thì từ 1960 đến 1996, 90% lượng bia được sản xuất trong khoảng từ 1984 – 1995.
  • Năm 1991 đánh dấu sự ra đời của nhiều nhà máy bia mới đã làm tăng quy mô thị trường 31% so với năm 1990. Nhịp tăng trung bình hàng năm từ 1990 đến 1996 là 28.7%. Mức bình quân đầu người tăng từ 0.41 lít/người năm 1975 lên 4.72 lít/người.
  • Các nhà máy bia ở Việt Nam thực sự phát triển từ sau năm 1992. Lúc này ngành bia có bước phát triển nhảy vọt, trở thành một ngành công nghiệp lớn và có nhiều triển vọng phát triển. Bia đã trở thành một thứ nước giải khát thông dụng, trở thành một nhu cầu thực sự của một bộ phận đáng kể dân cư và cũng mang lại nguồn thu lớn cho ngân sách.
  • Năm 1994, bia hơi chiếm 23.7% tổng lượng bia bán trên thị trường; còn lại chủ yếu là bia lon, bia chai. Trong đó, bia hơi liên doanh, bia Hà Nội, bia Sài Gòn được quốc tế kiểm nghiệm mẫu bia và đánh giá là tốt hơn trong khi các hãng bia địa phương khác thì chất lượng kém và không đản bảo tiêu chuẩn vệ sinh công nghiệp thực phẩm.
  • Năm 1996, toàn thị trường có 26 doanh nghiệp sản xuất bia của nhà nước, liên doanh và tư nhân. Thị trường ghi nhận có sự có các hãng bia nổi tiếng của 6 nước trên thế giới là Pháp, Hà Lan, Đan Mạch, Anh, Philipin, Singapore đầu tư vào ngành bia Việt Nam. Đầu tư liên doanh đã đem lại bộ mặt mới cho ngành bia nước ta. Trong đó sự thay đổi đáng kể nhất là công nghệ mới được áp dụng.

Trong suốt thời kỳ này, các nhà máy bia được không ngừng mở rộng trên phạm vi cả nước, tuy vậy phục vụ chính vẫn là thị trường nội địa. Đây cũng là thời kỳ phức tạp bởi tình trạng nhập lậu, làm giả, hàng kém phẩm chất trên thị trường có nhiều.

Ngành bia phát triển tạo điều kiện cho các ngành sản xuất khác phát triển như: nông nghiệp, giao thông, cơ khí, bao bì (nhựa, thủy tinh, giấy, kim loại,…). Tính bình quân sản xuất 1 triệu lít bia của công ty quốc doanh Trung ương tích lũy cho Nhà nước từ 4-6 tỷ đồng.

Ngành bia còn thu hút nguồn lao động đáng kể, tận dụng các nguồn nội lực sẵn có trong nước và có điều kiện mở rộng ra thị trường thế giới. Vì vậy, sản phẩm của ngành chiếm một vị trí quan trọng trong nền kinh tế quốc dân.

Ngành đã được đầu tư cơ sở vật chất tương đối lớn, nhiều cơ sở có thiết bị, công nghệ hiện đại, tạo ra nhiều sản phẩm có tín nhiệm với người tiêu dùng trong nước hoặc khu vực như: bia 333, bia Hà Nội, bia Sài Gòn…

Từ chỗ chỉ có 2 nhà máy là bia Hà Nội và bia Sài Gòn, đến 2015, cả nước ta có 469 cơ sở sản xuất với năng lực 1021 triệu lít /năm. Hiện nay, bình quân tiêu thụ bia đầu người trong một năm là 8,5 lít. Với tốc độ phát triển nhanh, đáp ứng về số lượng và chất lượng, các sản phẩm bia Việt đang dần dần thay thế sản phẩm nhập khẩu và nâng cao giá trị nông sản thực phẩm.
