Đồ uống thủ công đặc biệt là bia thủ công (craft beer) đang trở nên rất thịnh hành tại thị trường Việt Nam những năm gần đây. Đây là một xu hướng cũng khá thú vị với người tiêu dùng bởi cái chất và hương vị riêng của nó. Đa số mọi người cũng đã có cơ hội thử bia thủ công, nhưng không mấy ai biết đến định nghĩa và cái chất riêng của rượu thủ công.

Thị trường rượu thủ công còn khá mới tại Việt Nam nhưng vẫn đang phát triển rất nhanh. Hãy cùng nhau điểm qua vài thương hiệu dẫn đầu cho xu hướng rượu thủ công tại Việt Nam.

Saigon Liquorists được thành lập bởi hai doanh nhân người Pháp với kiến thức chuyên sâu về chưng cất rượu. Thương hiệu tôn vinh vẻ đẹp của đồ uống đặc biệt là rượu thủ công. Saigon Liquorists nhấn mạnh, quá trình sản xuất ra Rhum Mía hảo hạng bắt đầu từ việc những cây mía được cắt và ép thành nước cất và sau đó được đóng gói cẩn thận để tránh bị lên men quá sớm.

“Quá trinh chưng cất từ “LULU” (cột chưng cất của chúng tôi) được tiến hành kĩ lưỡng để có được 78% nồng độ cồn và sẽ được chưng trong những cái Chum theo kiểu truyền thống của người Việt trong vòng 8 tháng.

Cuối cùng, rượu được đưa vào quá trình “reduction’ (tiếng Pháp) để nồng độ ABV% được hạ xuống 45, nồng độ cồn cuối cùng của Rhum Mía. Quá trình này được thực hiện trong vòng 2 tháng và trải qua 2 lượt châm nước mỗi ngày.

Rhum Mía có thị thanh hơn và đặc trưng hơn so với vị Rhum thường với một độ nhấn rất đậm nhưng thanh mát hơn bởi quá trình chưng cất đặc biệt kết hợp với chút hương ngọt nhẹ của mía.

SƠN TINH

Sơn Tinh được sáng lập bởi doanh nhân khởi nghiệp người Thuỵ Sĩ với tình yêu và sự ngưỡng mộ của riêng anh dành cho hương vị và quá trình làm rượu truyền thông của Việt Nam. Sự kết hợp giữa rượu nếp việc nam, một phong tục và truyền thống làm rượu được truyền từ đời này sang đời khác, cùng với nghệ thuật chưng cất anh học được ở quê nhà Thuỵ Sĩ đã tạo nên nguồn cảm hứng của Sơn Tinh.

Vậy điều gì làm Sơn Tinh trở nên đặc biệt trong các loại rượu thủ công cũng như các loại rượu truyền thống Việt Nam? Bí mật của thương hiệu nằm ở quá trình chưng cất hoàn toàn loại bỏ các chất độc hại trong rượu. Chính Sơn Tinh kể nên câu chuyện của mình rằng:

“Markus đã thuyết phục các xưởng rượu địa phương loại bỏ những phần độc hại – một yêu cầu mà những người dân chưa bao giờ nghe thấy

Cuối cùng, dân làng đã đồng ý thực hiện một mẻ rượu đặc biệt. Chỉ phần rượu tim (phần chứa đựng rượu tinh khiết nhất trong quá trình chưng cất) là được giữ lại trong thành phẩm cuối cùng. Họ miễn cưỡng loại bỏ gần 50% số rượu đọng lại sau khi chưng cất. Trước sự ngạc nhiên của những người dân làng, rượu ra êm hơn, thơm hơn, và tuyệt đối không còn những triệu chứng có hại như những mẻ rượu thường thấy…”

Thay vì định hướng cho thương hiệu của mình trong tiếng Anh với từ craft liquor như mọi người vẫn thường gọi, Sơn Tinh gọi chính thương hiệu của mình là Craft (thủ công) Rượu. Chữ Rượu dường như để giữ được cái hồn của rượu Việt Nam. Sơn Tinh hiện có 12 hương vị rượu với nồng độ ABV khác nhau từ 27% hoặc 38%; và các hương rượu không hề nhàm chán được gắn với cái tên cũng không kém phần độc đáo của chúng. Vài hương vị tiêu biểu là:

– Nếp Cẩm: sự kết hợp của vị ngọt và mùi thơm của gạo nếp được lên men.

– Vương Tửu: Vị thơm của hoa và vị ngọt pha chút đắng đặc trung của gỗ trọng già và dâu rừng.

– Nhất Dạ: Vị chua kết hợp với vị đắng và có chút ngọt.

– Mận Đỏ: Vị ngọt nhưng rất thanh của mận đỏ không thể thiếu trong một bộ sưu tập rượu thủ công.

Bên cạnh đó Sơn Tinh còn có Mỹ Tửu, một số vị rượu hoa quả với vị Chanh Dây, Mơ, Táo và Bạch Sâm, Nếp Phú Lộc và Minh Mạng. Tất cả hương vị đều được nấu thủ công và chất lượng luôn được đảm bảo.
