Bia thủ công và vai trò của Airlock
Khi nấu bia thủ công, việc ủ lên men là bước then chốt. Và điều dĩ nhiên mà ai cũng biết là khi men hoạt động thì sẽ sinh ra một lượng lớn khí CO2.
Nếu để nguyên, lượng CO2 nhiều lên khiến áp suất trong bình tăng, đến một mức nào đó sẽ làm vỡ bình ủ. Vậy là công cốc! Nhưng nếu mở bình ủ để xả CO2, khí O2 sẽ xâm nhập vào bình, ảnh hưởng đến quá trình lên men. Kết quả là sẽ chẳng thu được mẻ bia nào cả.
Lúc này, Airlock chính là dụng cụ cứu cánh thần thánh, vừa xả CO2 lại ngăn O2 vào bình. Airlock sẽ được cắm vào nắp bình ủ, có vòng đệm cao su để ngăn trường hợp bị hở. Cụ thể hơn thì airlock là gì? Đáp án chính xác như sau: Airlock chính là dụng cụ cân bằng áp suất và ngăn O2 xâm nhập trong quá trình ủ bia.

Loại airlock hình trụ tròn có thể tháo lắp và gồm có 3 bộ phận khác nhau. Vậy nên, loại này lau rửa rất thuận tiện, đặc biệt trong trường hợp lên airlock bị tắc vì quá trình lên men của bia diễn ra quá mạnh.
Loại airlock hình chữ S thì không thể tháo lắp. Loại này thường được người nấu bia sử dụng khi lên men chính (bước có nguy cơ bị tắc nhiều nhất).
Lưu ý thêm: nước được sử dụng ở trong Airlock là nước tinh khiết, không có vi khuẩn để không làm ảnh hưởng đến chất lượng bia.
Một số lưu ý khi dùng airlock
Mục đích hàng đầu khi sử dụng airlock là giảm áp suất trong bình ủ và ngăn ngừa vi khuẩn, O2 đi vào bên trong. Khi cân bằng áp suất thì chắc chắn bên trong airlock sẽ xuất hiện bọt khí. Nhưng nếu airlock không hề có bọt khí thì sao?
Thông thường, khí CO2 sẽ thoát ra sau 24 tiếng tính từ lúc bắt đầu ủ. Khí sẽ thoát liên tục trong vòng 3 ngày. Nhưng trong thực tế thì khoảng thời gian này có thể khác nhau tùy từng loại bia. Có 3 nguyên nhân dẫn đến việc không có bọt khí thoát ra:
Bình ủ bị hở
Men không hoạt động
Airlock lắp chưa kỹ, bị hở
Bạn nên kiểm tra cẩn thận xem nguyên nhân ở đâu và khắc phục. Đôi khi có tình trạng bọt khí xuất hiện thêm 1 lần nữa sau khoảng vài ngày hoặc vài tuần, khi quá trình lên men dừng lại. Đó là do một số chủng nấm men có thể tự nhiên hoạt động lại.
