Nấm men là một trong những nguyên liệu cực quan trọng. Chúng là những sinh vật đơn bào – một trong những dạng sống đơn giản nhất – đảm nhận trọng trách lên men trong quá trình nấu bia thủ công.

Nhiều thợ nấu bia thủ công coi nấm men là nguyên liệu bí mật, tạo nên công thức bia của riêng họ.

Vai trò của nấm men trong quá trình làm bia thủ công

Nấm men thuộc họ nấm. Chúng có khả năng phân chia tế bào, còn được gọi là tự tái tạo. Nấm men rất thích những chất lỏng có vị ngọt, chúng sẽ sản xuất ra một lượng ethanol và carbon dioxide dồi dào.

Đa phần các dòng bia thường từ 4 đến 6% độ. Tuy nhiên, có nhiều trường hợp những thợ nấu bia thủ công tạo ra mẻ bia có nồng độ cồn cao hơn, họ sẽ sử dụng nấm men đặc biệt cho những mẻ bia có nồng độ cao.

Nấm men Ale là dòng nấm men cổ nhất. Thời gian đầu, nấm men không được xem là thành phần của bia, cho đến khi vai trò của chúng được phát hiện thấy. Thời điểm phát triển trùng với giai đoạn phát minh ra kính hiển vi vào đầu những năm 1700 và được Louis Pasteur tiếp tục phát triển trong gần 1 thế kỷ sau đó. Nấm men Lager thì là loại nấm biến đổi gen, được hoàn thiện vào giữa những năm 1800.

Từ cuối những năm 1800, có hơn 500 chủng nấm men tinh khiết được phân lập và nuôi cấy. Các ngân hàng nấm men thương mại đã lưu trữ các chủng nấm này trong môi trường vô trùng. Nấm men là yếu tố giúp tạo nên phong cách bia. Các thợ nấu bia thủ công lựa chọn men dựa theo công thức hoặc dòng bia mà họ muốn nấu. Nhưng về cơ bản thì nấm men được phân chia thành nấm men Ale và nấm men Lager.

– Nấm men Ale là men nổi, hoạt động tốt nhất trong môi trường có nhiệt độ từ 15 đến 24 độ C.

– Nấm men Lager là men chìm, hiệu suất hoạt động cao nhất ở môi trường có nhiệt độ lạnh, từ 3 đến 11 độ C.

Do sự khác biệt về nhiệt độ hoạt động, mỗi một chủng nấm men lại tạo ra đặc tính hương vị, mùi thơm khác nhau. Từ đó, chúng ảnh hưởng tới đặc tính của mình. Các thợ nấu bia sẽ cố gắng giữ hương vị này trong tầm kiểm soát, tùy theo phong cách bia mà họ đang hướng tới.

Những lỗi lựa chọn và sử dụng nấm men khiến bia không lên men

Sẽ có rất nhiều vấn đề xảy ra trong quá trình lên men cho bia. Phổ biến nhất trong số đó là mẻ bia của bạn không lên men. Trước khi bỏ đi cả mẻ bia đó, bạn cần kiểm tra lại thật cẩn thận. Xem xét các bong bóng ở airlock và các dấu hiệu lên men khác của bia.

– Quan sát bia. Nếu bạn nhìn thấy bọt hoặc vòng cặn bã màu nâu xung quanh thì bia đang hoặc đã lên men. Bạn có thể dễ dàng quan sát nếu chọn bình lên men bằng thủy tinh. Còn nếu chọn bình nhựa thì có thể nhìn qua lỗ thông lắp airlock với bọt khí nổi lên.

– Sử dụng tỷ trọng kế để kiểm tra. Bia đã lên men thì thường có tỷ trọng nhỏ hơn so với tỷ trọng ban đầu.

Nếu trong vòng từ 24 đến 48 tiếng, bia vẫn chưa lên men thì bạn có thể bổ sung thêm nấm men. Sau khi thêm nấm men, bia vẫn không lên men thì có thể bạn đã mắc phải những lỗi sau đây:

Những lỗi cần tránh trong quá trình sử dụng và chọn nấm men

– Bạn chưa rửa sạch chất khử trùng trong các thiết bị có liên quan đến quá trình lên men. Chất khử trùng có thể giết chết nấm men. Vậy nên, hãy thật cẩn thận ở bước làm sạch.

– Nhiệt độ dịch hèm hoặc nước vô trùng để hoạt hoá men khô là vô cùng quan trọng, với nấm men nổi, nhiệt độ bù nước tối ưu là 25-29 độ C, với nấm men chìm, nhiệt độ bù nước tối ưu là 21-25 độ C

– Ngoài ra, bạn không nên bù nước cho men quá lâu, 30 phút là khoảng thời gian tối đa.

– Bạn sử dụng nấm men cũ hoặc nấm men đã chết. Vậy nên, lời khuyên dành cho bạn là hãy mua nấm men mới và giữ chúng trong tủ lạnh.

– Bạn dùng nấm men loại tốt nhưng lại khiến chúng bị sốc nhiệt vì thay đổi nhiệt độ đột ngột: thêm chúng vào dịch hèm quá nóng hay quá lạnh

– Lượng nấm men sử dụng chưa đủ khiến quá trình lên men không hoàn thiện. Dùng quá nhiều nấm men cũng không tốt, chúng làm mất hương vị của bia. Bởi nấm men sẽ ăn hết đường trước khi hoàn thành chu kỳ lên men đầy đủ. Bạn cần khoảng 50-80g/hl với nấm men lên men nổi và 80-120 g/hl với nấm men lên men chìm.
