CÔNG THỨC : IPA
IPA là tên viết tắt của India Pale Ale (bia vàng Ấn Độ) – một trong những dòng bia thủ công dịu nhẹ phổ biến nhất. Dòng bia Pale Ale có nguồn gốc từ Anh Quốc, ra đời từ năm 1800 hoặc cuối những năm 1700.
IPA đóng thùng gỗ sồi, đem qua Ấn Độ để phục vụ binh lính Anh tại đây. Hiện nay, dòng bia này được biến tấu thành rất nhiều loại khác nhau.
American India Pale Ale có hương thơm của hoa, trái cây, nhựa thông với độ đắng nguyên bản. Loại bia này có độ cồn từ 6.3 – 7.5%, nhiệt độ uống phù hợp là từ 10 – 12℃.
English-Style India Pale Ale có độ cồn từ 5 – 7%, vị tròn đầy, nhiệt độ uống phù hợp từ 7 – 10℃.
Imperial India Pale Ale có nồng độ cồn cao nhất trong dòng IPA, 7.5 – 10.5%. Loại bia này khá đậm đặc, hương vị hoa bia rõ rệt. Nhiệt độ uống phù hợp là từ 10 – 12℃.

Sau đây là công thức nấu IPA cơ bản.

Độ Đường Đầu (OG): 12°P
Nguyên liệu cho mẻ nấu 20 lít

1. Pale Ale Malt: 4.0kg
2. Carapils Malt: 0.5kg
#Hops
Hop lần 1 và 2: Centennial: 50 gram (12.3% alpha)
Hop lần 3 và 4: Cascade: 100 gram (6.8% alpha)
#Men: Safale US-05
#Nước : 23 lít
Quy trình nấu:
#Mash #Programme:
Nhiệt độ ban đầu: 63°C
Nâng lên 63°C giữ trong 70′
Nâng lên 73°C giữ trong 5′
Nâng lên 78°C giữ trong 5′
Đun sôi trong 80′
#Sôi #Hoa #
25 gram Hop số 1: 70′ trước khi kết thúc sôi hoa
25 gram Hop số 1: 55′ trước khi kết thúc sôi hoa
40 gram Hop số 2: 40′ trước khi kết thúc sôi hoa
30 gram + 30 gram Hop số 2: kết thúc sôi hoa và làm lạnh
Lên_men chính ở nhiệt độ khoảng 22°C. Hạ lạnh xuống còn 18 độ trong vòng 2 – 3 ngày.
Lên_men phụ: 2 – 3 tuần trong tủ lạnh ở nhiệt độ 5°C.
