Xu hướng thưởng thức bia tươi từ vòi xuất hiện lần đầu tiên vào cuối những năm 1800s do người Pháp khởi xướng. Sang đến thế kỷ 21, những quán bia kiểu Đức và Cộng hòa Séc như Gammer và Hoa Viên Brauhaus bén rễ tại các thành phố lớn của Việt Nam, lúc bấy giờ người Việt cũng bắt đầu tự nấu bia thủ công. Đến năm 2010, việc tiêu thụ bia tại Việt Nam đã đạt mức kỷ lục, tăng 40% tương ứng với 4 tỷ lít. Hiện nay, Việt Nam là nước tiêu thụ bia cao thứ nhì châu Á, chỉ sau Hàn Quốc.
Vài năm trở lại đây, trào lưu sản xuất và thưởng thức bia thủ công nở rộ tại Việt Nam. Tính đến năm 2018, Việt Nam hiện đang là ngôi nhà chung của khoảng 30 nhà sản xuất bia thủ công, và con số này vẫn đang tăng lên nhanh chóng. Sự hiện diện của bia thủ công dần trở thành biểu tượng hiện đại cho ngành thực phẩm và dịch vụ ăn uống tại Việt Nam. Đồng thời, Việt Nam cũng đang dần thu hút được sự chú ý từ cộng đồng bia thủ công quốc tế.
Tính đến năm 2018, Việt Nam hiện đang là ngôi nhà chung của khoảng 30 nhà sản xuất bia thủ công, và con số này vẫn đang tăng lên nhanh chóng.
Năm 2017, cả hai trang CNN Travel và trang ẩm thực Munchies của Vice đều dùng từ “bùng nổ” để mô tả về sự phát triển của bia thủ công tại Việt Nam. Trang Travel + Leisure Asia còn vinh danh công ty bia Pasteur Street Brewing Company một hãng bia thủ công “không thể bỏ qua” tại châu Á, sau khi Pasteur Street mang về giải thưởng quốc tế với bia Imperial Chocolate Cycle Stout.
Vậy chính xác thì điểm đến cho bia thủ công là gì?
Điểm đến cho bia thủ công là một nơi thu hút những người yêu bia thủ công từ khắp nơi trên thế giới, họ tìm đến vì một hương vị mới, phong cách mới, và công thức mới.
Rất đơn giản, điểm đến cho bia thủ công là một nơi thu hút những người yêu bia thủ công từ khắp nơi trên thế giới, họ tìm đến vì một hương vị mới, phong cách mới, và công thức mới. Những nguyên liệu địa phương độc đáo chính là điểm lôi cuốn cốt yếu của bia thủ công Việt Nam, như bia Mango IPA của LAC Brewing Company, hay cacao ngòi Việt Nam đến từ Heart of Darkness chẳng hạn.

Một ‘điểm đến’ tuyệt vời là nơi được vun đắp bởi tình yêu, nhiệt huyết và sự cần mẫn.
Tại những điểm nóng như Portland, Oregon và Santa Rosa nơi quê nhà của Chad, “những nhà nấu bia thường tận dụng nguyên liệu địa phương và cải biến lại cho phù hợp. Điều này thường khiến những công ty bia lớn phải đau đầu,” Chad giải thích.
Bia thủ công Việt Nam là gì?
Bia thủ công Việt vừa học hỏi được tinh hoa của văn hoá phương Tây, lại vừa in đậm dấu ấn địa phương thông qua việc sử dụng những nguyên liệu và hương vị Việt.
Tuấn Nguyễn, nhà đồng sáng lập của Thơm Brewery tại Hà Nội, cho rằng bia thủ công Việt Nam có một điểm mạnh riêng biệt. Anh giải thích rằng bia thủ công Việt vừa học hỏi được tinh hoa của văn hoá phương Tây, lại vừa in đậm dấu ấn địa phương thông qua việc sử dụng những nguyên liệu và hương vị Việt. “Chúng tôi từng thử nghiệm với những nguyên liệu địa phương như hạt kiều mạch Hà Giang, cacao từ đất phương Nam như Bến Tre, Tiền Giang và Bà Rịa – Vũng Tàu.”
Trong lần phỏng vấn trước cùng Vietcetera, Tuấn đã chia sẻ rằng anh muốn công ty bia của mình có thể kết hợp càng nhiều nguyên liệu Việt vào bia thủ công càng tốt… Ngoại trừ hoa bia phải lấy từ một nguồn khác. “Đây là cách giúp chúng tôi cải biến văn hóa bia thủ công phương Tây để phù hợp hơn với khẩu vị người Việt.”
Thơm Brewery không phải là công ty bia thủ công Việt duy nhất được truyền cảm hứng từ các nguyên liệu nội địa. Đu đủ, chanh dây, trái vú sữa và thậm chí là sầu riêng đều được sử dụng cho những loại bia thủ công địa phương, trong khi Furbrew tại Hà Nội còn tiến xa hơn khi họ thậm chí còn pha chế ra “Bia Phở”.
Việt Nam là một điểm đến dành cho bia thủ công
Kể từ năm 2016, ngành bia thủ công tại Hà Nội mới bắt đầu phát triển mạnh.
Thiện Bảo, đồng sở hữu của Vespa Adventures, công ty bắt đầu tổ chức tour mô-tô Vespa vintage tại Thành phố Hồ Chí Minh từ năm 2007. Hiện nay, họ đã mở rộng quy mô ra Campuchia và Thái Lan.
Tính đến 2018, tour phát triển nhanh nhất của họ là 4 điểm dừng chân cho bia thủ công, các khách hàng tham gia sẽ đi vòng quanh thành phố vào chiều tối, dừng chân ở một số địa điểm bia thủ công sản xuất tại Việt Nam. “Tour này lan tỏa nhanh chóng hơn nhiều so với những tour khác mà chúng tôi từng tổ chức. Trong tương lai, có thể nó sẽ trở nên phổ biến như một tour đang rất được ưa chuộng hiện giờ của chúng tôi: ‘Saigon After Dark’”, Bảo chia sẻ.
Vespa Adventures luôn mong muốn tạo ra một tour riêng biệt cho bia thủ công tại Việt Nam. “Bia thủ công đang là xu hướng trên toàn thế giới, và Việt Nam thì đang dần chuyển mình trở thành một điểm đến dành cho bia thủ công. Chúng tôi muốn giới thiệu đến mọi người một số nhà nấu bia thủ công tuyệt hảo nhất thành phố. Họ vẫn đang không ngừng cố gắng đưa hương vị bia lên một tầm cao mới, đồng thời khám phá những loại bia từ khắp nơi trên thế giới trong bối cảnh Việt Nam,” Bảo nói.
Sau Thành phố Hồ Chí Minh, Hà Nội là địa điểm lan rộng thứ hai của bia thủ công. Tại thành phố thủ đô, Brian McDonald, người đứng sau “A Taste of Hanoi” đã tổ chức một tour vòng quanh dành riêng cho bia thủ công tại Việt Nam. “Tour bia thủ công này rất được các khách du lịch từ Úc và Mỹ ưa chuộng,” anh nói. Anh đã nảy ra ý tưởng đó ngay sau thành công của một trong những buổi khai mạc lễ hội bia thủ công được tổ chức tại Hà Nội, nhưng anh vẫn phải tiếp tục kiên nhẫn trong thời gian đầu. “Chúng tôi vẫn phải chờ cho các quán bar bia thủ công tại Hà Nội xây dựng và ổn định xong, nếu không sẽ không có đủ chỗ để đưa mọi người tới khám phá,” McDonald giải thích.
Kể từ năm 2016, ngành bia thủ công tại Hà Nội mới bắt đầu phát triển mạnh. “Ban đầu chúng tôi nhập một số bia thủ công từ các công ty tại Sài Gòn như Platinum và Pasteur Street Brewing Company. Sau đó chúng tôi bắt đầu nấu bia ngay tại Hà Nội. Hiện tại, số lượng các công ty bia tại Hà Nội đã tăng lên và họ không ngừng sáng tạo nên những loại bia thủ công mang nét văn hóa cũng như phù hợp với khẩu vị Việt.”
“Ngành bia thủ công tại đây đang theo xu hướng kết hợp ẩm thực phù hợp cùng bia thủ công, đồng thời tận dụng nguyên liệu địa phương để tạo ra những loại bia mới,” Mitchell chia sẻ.
Chad Mitchell đến từ thương hiệu Beervana tin rằng, Việt Nam có đầy đủ điều kiện để trở thành một điểm đến dành cho bia thủ công được toàn thế giới công nhận. “Tôi cho rằng Việt Nam có một vị thế rất may mắn. So với những quốc gia láng giềng, Việt Nam có những đạo luật hợp lý hơn về vấn đề sản xuất và tiêu thụ thức uống có cồn. Điều này đã giúp Việt Nam tự mình định ra những chuẩn mực về bia thủ công tại châu Á.”
Cùng quan điểm với Tuấn Nguyễn và Thiên Bảo, anh cũng nhấn mạnh rằng phương pháp tiếp cận bia thủ công đặc thù của Việt Nam đã giúp quốc gia này trở nên khác biệt. “Ngành bia thủ công tại đây đang theo xu hướng kết hợp ẩm thực phù hợp cùng bia thủ công, đồng thời tận dụng nguyên liệu địa phương để tạo ra những loại bia mới,” Mitchell chia sẻ.
“Tôi nghĩ rằng điều quan trọng nhất là khuyến khích người Việt tự sáng tạo ra loại bia riêng, để có thể giới thiệu những loại bia, những ý tưởng mới và cuối cùng mới hỗ trợ khi cần thiết, có vậy ngành bia thủ công mới có thể vươn cao hơn,” Mitchell chốt hạ.
