Trong từng giai đoạn và ở mỗi một thị trường, “gu” thưởng thức bia của người tiêu dùng sẽ mang những đặc trưng riêng. Để tìm ra những hương vị bia nổi trội và phù hợp, người nấu bia cần thực hiện sứ mệnh “dạo chơi” với các nguyên liệu và sẵn sàng sáng tạo những công thức mới.

Bia là thức uống được tạo nên bởi các nguyên liệu chính: nước, đại mạch, hoa bia và men. Một thức bia đúng chuẩn sẽ trải qua các công đoạn cơ bản: ủ, nấu, lên men, lọc và chiết. Mặc dù chỉ có bốn loại nguyên liệu và năm công đoạn chế biến chính, nấu bia không phải là việc đơn giản, mà còn là cả một quy trình đòi hỏi sự đầu tư kĩ lưỡng với tỉ lệ nguyên liệu cần được cân đo chính xác.

Trong đó, nước là thành phần chiếm từ 80-90%, nên nguồn nước và các dưỡng chất trong nước có những ảnh hưởng nhất định đến hương vị bia. Đại mạch cũng là nguyên liệu không kém phần quan trọng, vì tùy theo nhiệt độ và khoảng thời gian rang đại mạch, chúng ta sẽ có những mẻ bia khác nhau từ mùi vị cho đến màu sắc. Bên cạnh đó, hoa bia và men bia cũng là hai yếu tố giúp định hình hương thơm và mùi vị của bia.

Quan trọng hơn, chính cá tính sáng tạo của người nấu bia sẽ là chiếc chìa khóa giúp khẳng định chất lượng của một mẻ bia. Nghệ nhân cùng sự sáng tạo, tính “nhạy cảm” với hơi thở của bia, và một chút tinh tế với vị giác người người tiêu dùng sẽ tạo nên sự nổi trội và hương vị khác biệt cho thành phẩm của mình.

Trên thế giới cũng từng có một nhà chế tác bia đến từ Đan Mạch, ông dũng cảm theo đuổi và nghiên cứu phương pháp lên men chìm hay còn gọi là lên men từ đáy thùng bia (bottom-fermented) kiểu bia đen vùng Bavaria thay vì dùng phương pháp lên men nổi, với hy vọng tìm ra một hương vị bia tuyệt hảo hơn. Ông là J.C Jacobsen – nhà sáng lập tập đoàn bia Carlsberg.

Chiếc chìa khóa cuối cùng để kích hoạt sự hòa quyện hoàn hảo giữa các yếu tố cấu thành nên một thức bia ngon chính là nhiệt độ. Hiểu được tầm quan trọng của nhiệt độ sẽ giúp người nghệ nhân nấu được những mẻ bia đúng hương, đúng vị, J.C Jacobsen – một “tượng đài vĩ đại” của làng bia thế giới đã tiên phong trong việc đầu tư vào xây dựng hầm ủ với nhiệt độ hoàn hảo cho việc nấu bia.

Bởi lẽ, hơn ai hết, nhà sáng lập hãng bia Carlsberg hiểu rằng nhiệt độ trong khâu sản xuất và việc bảo quản lạnh ở nhiệt độ cố định đóng vai trò vô cùng quan trọng nên ông đã cho xây dựng các hầm ủ thoáng đãng để đảm bảo chất lượng bia “lên đến độ hoàn hảo nhất có thể.”

J.C. Jacobsen vốn được xem là “con người của thời đại”, khi luôn giữ một niềm tin vững vàng vào sức mạnh của khoa học kĩ thuật. Điều đó được thể hiện rõ nét qua di chúc ông viết: “Ai tinh thông về hóa học, hiểu sâu sắc các ngành khoa học phụ trợ, có kinh nghiệm thực tế và hiểu biết về nghề, sẽ thành người dẫn đầu trong ngành công nghiệp bia ở châu Âu trong tương lai”.

Chính nhờ tư tưởng này, năm 1875, Jacobsen đã thành lập phòng thí nghiệm chuyên nghiên cứu về sản xuất bia đầu tiên trên thế giới. Nơi đây đã tập hợp những nhà khoa học hàng đầu để tiến hành nhiều nghiên cứu chuyên sâu và phát minh ra các sáng kiến mang tính đột phá, điển hình. Men bia thuần chủng Saccharomyces Carlsbergensis và thang đo độ pH là hai phát minh góp phẩn thay đổi diện mạo nền công nghiệp sản xuất bia cũng như nền khoa học cho toàn nhân loại.

Men bia thuần chủng Saccharomyces Carlsbergensis có độ tinh khiết đã giúp giải quyết cơn khủng hoảng “bia xấu”, thay thế cho loại men chứa nấm hoang, dễ dàng làm hỏng và gia tăng quá trình lên men không kiểm soát dẫn đến chất lượng bia kém đi.

Với thang đo độ pH, người nấu bia có thể xác định được mức độ axit hoặc kiềm của dung dịch trên thang từ 0 đến 14, qua đó xác định loại enzyme tạo ra loại bia có độ bọt ổn định và hương vị tốt hơn.

Có thể thấy, một thức bia hoàn hảo đòi hỏi sự chăm chút không chỉ ở nguyên liệu, men bia, hoa bia hay nhiệt độ mà để làm ra nó là cả một sự dày công nghiên cứu không ngừng.
