Pumpkin Ale là loại bia lâu đời sử dụng nhiều loại gia vị, thảo mộc. Bia sử dụng hop đắng là Fuggles và East Kent Goldings cùng với American Willamette để tạo mùi thơm.

Màu sắc bia ngả từ cam đến hổ phách. Bia có mùi hương không chỉ bắt nguồn từ hops mà còn từ các loại gia vị.

Với mẻ nấu 100l bia, gia vị gồm 2 thìa đinh hương và hạt tiêu, 3 thanh quế và khoảng 50 gram gừng bỏ vỏ.

Bí ngô và gia vị được chuẩn bị theo những cách khác nhau tuỳ vào người nấu: phần lớn người nấu sẽ nướng bí ngô. Có người bỏ hạt hoặc không bỏ hạt, nghiền hoặc không nghiền, có người bổ sung gia vị vào nồi đường hoá, có người lại bỏ vào tank lên men để tạo hương bí ngô mạnh mẽ hơn.

Công thức dưới đây dùng khoảng 5.4kg bí ngô bỏ hạt, lột vỏ, nướng qua và nghiền.

Thông số cơ bản:

Độ đường đầu (OG): 25°P

Độ đường cuối (FG): 3°P

Độ đắng (BU): 26 BU

ABV: 5.4%

Nguyên liệu cho mẻ nấu 100 lít

#Malt

  1. Weyermann Pale Ale: 14.78 kg
  2. Weyermann Caraamber: 1.85 kg
  3. Weyermann Caramunich II: 1.85 kg
  4. Bí ngô: 5.375 kg

#Hops

Hop lần 1. Fuggles: 292 gram

Hop lần 2. Wilamette: 278 gram

#Men: Lallemand BRY-97

Chuẩn bị bí ngô: Loại bỏ cuống, cắt mỗi quả thành 2 – 3 miếng, loại bỏ hạt. Đặt trên khay nướng trong 90 phút ở 190°C, mặt có vỏ quay lên trên. Để nguội và lột vỏ sau đó nghiền mịn.

Quy trình nấu:

#Mash In: 60°C cùng với bí ngô. Giữ 60 phút

Nâng nhiệt độ lên 74°C. Giữ 10 phút

Nâng nhiệt độ lên 76°C và Mash Out

#Sôi Hoa trong 75 phút

Hops số 1: Đun sôi 60 phút

Ngâm gói gia vị trong nồi trong 15 phút

Hops số 2 và Irish Moss (3 thìa/100l): Đun sôi 5 phút

Nhấc gói gia vị ra khi kết thúc quá trình sôi

#Lắng Xoáy ít nhất 30 phút

#Lên Men Chính ở 21°C trong vòng 10 – 15 ngày.

#Lên Men Phụ trong chai trong vòng 2 – 4 tuần.
