Phong cách Irish Red Ale, giống như English Brown Ale được phát triển từ loại bia ale thời trung cổ, nhưng có vị rất giống Vienna Lager của Trung Âu. Có nhiều tranh cãi xung quanh các đặc điểm của loại bia này.

Độ cồn thường từ 4.2% – 5.2%, hậu vị khô, không có vị hoa quả và rất ít hops. Bia có mùi caramel nhẹ.

Độ đường cuối (FG): 2.75°P

Độ đắng (BU): 24 BU

ABV: 4.4%

Nguyên liệu cho mẻ nấu 100 lít

  1. Weyermann Pale Ale: 7.18 kg
  2. Weyermann Vienna: 4.31 kg
  3. Weyermann Melanoidin: 1.44 kg
  4. Weyermann Caramunich III: 1.29 kg
  5. Weyermann Roasted Barley: 0.14 kg

#Hops

Hop lần 1. Fuggles: 182 gram

Hop lần 2. Fuggles: 48 gram

#Men: Lallemand Windsor, Lallemand Nottingham

Quy trình nấu:

#Mash In: với tỉ lệ nước/nguyên liệu là 3:1 theo khối lượng khô ở nhiệt độ: 67°C trong 45 phút.

Nâng nhiệt độ lên 76°C. Rửa bã với nước 77°C cho đến khi đạt lượng dịch bia mong muốn.

#Sôi Hoa trong 65 phút

Hops số 1: Đun sôi 60 phút

Hops số 2: Đun sôi 5 phút

#Lắng Xoáy trong 30 phút

#Lên Men Chính ở 19°C trong vòng 7 ngày.

#Lên Men Phụ trong vòng 14 ngày.
