Hops được giới thiệu lần đầu tại nước Anh bởi những người nhập cư Flemish chỉ từ những năm 1400, trong khi đó lục địa châu Âu, Hops đã được sử dụng để bổ sung hương vị cho bia từ nhiều thế kỷ trước.

Do đó người Anh chậm hơn trong việc tiếp xúc với sự kỳ diệu và những tiềm năng của hops.

Có thể loại bia ale đầu tiên của Anh có vị đắng từ hops là India Pale Ale (IPA), được nấu lần đầu vào những năm 1790 tại Anh. Sau đó là tại Burton-on-Trent cho các thuộc địa của Anh mà ngày nay là Ấn Độ, Pakistan, Bangladesh và Sri Lanka.

English Pale Ale có mùi hoa quả và ester nhẹ, được nấu kiểu single-infusion (một bước nhiệt độ) với hương hops tinh tế và hậu vị sắc nét.

Độ đường đầu (OG): 13°P

Độ đường cuối (FG): 3.25°P

Độ đắng (BU): 40 BU

ABV: 5.3%

Nguyên liệu cho mẻ nấu 100 lít

  1. Weyermann Pale Ale: 15.73 kg
  2. Weyermann Caraamber: 1.37 kg

#Hops

Hop lần 1. East Kent Goldings: 245 gram

Hop lần 2. East Kent Goldings: 152 gram

#Men: Lallemand Windsor, Lallemand Nottingham

Quy trình nấu:

#Mash In: 68°C giữ 45 phút

Rửa bã với nước ở 82°C để nâng nhiệt độ lên khoảng 76°C ± 1°C và Mash Out.

#Sôi Hoa trong 60 phút

Hops số 1: Đun sôi 55 phút

Hops số 2: Đun sôi 5 phút

Hops số 3: Khi bắt đầu lắng xoáy

#Lắng Xoáy trong 30 phút

#Lên Men Chính ở 16°C – 21°C trong vòng 7 ngày.

Lên Men Phụ trong vòng 21 ngày
