Các thông số kỹ thuật nấu bia cho bia Abbey của Bỉ hay còn gọi là Trappist Ale rộng tới mức không thể phân loại được. Nồng độ cồn có thể thay đổi từ 4% – 12%; độ đường đầu từ 12.5°P – 25°P; độ đường cuối từ 2.5°P – 5°P. Màu sắc bia thay đổi từ vàng đậm sang đỏ sẫm.

Malt nền cho Abbey/Trappist thường là Pilsner hoặc Pale Ale Malt. Độ đắng của Dubbel có thể thay đổi từ 20 BU đến 45 BU, và hops dùng nhiều chủng loại: Đức (Tettnanger, Hallertauer Mittelfruh, Spalt hoặc Perle), Cộng hoà Séc (Saaz), và Slovenia (Styrian Goldings)

Thuật ngữ Dubbel (tiếng Flemish) hay Double (tiếng Pháp) – có nghĩa là hai lần- hay dòng bia Tripel có tên gọi là Tripel (tiếng Flemish) hay Triple (tiếng Pháp) – có nghĩa là ba lần. Dubbel/Double thường có màu hổ phách hay màu đồng trong khi Tripel/Triple thường có màu vàng.

Theo quyết định của toà án Bỉ, chỉ có 6 tu viện tại Bỉ và 1 trên đất Hà Lan – được phép gọi bia của họ là Trappist Ale – Bia Thầy Tu một cách hơp pháp. Các tu viện này lần lượt là: Achel, Chimay, Orval, Rochefort, Westmalle, và Westvleteren, và Brouwerij de Koningshoeven.

Tất cả các loại bia Abbey khác phải được ghi trên nhãn là Abdijbier (Flemish) hoặc Biere d’Abbeye (French) để phân biệt chúng với dòng bia Abbey làm bởi các thầy tu.

Các loại bia Abbey đều có đặc điểm chung là lên men trong chai. Thêm vào đó, loại bia ale này đều có bọt lớn, dày, và kem; mùi hương phức tạp, có mùi của hoa quả và ester; và thỉnh thoảng có hậu vị ngọt. Đặc biệt việc ủ nhiều lần thường tạo ra hương cherry hay gỗ sồi.

Người nấu Abbey/Trappist thường bổ sung đường, syrup đường vào nồi nấu để tăng khả năng lên men và nồng độ cồn. Các loại đường này thường có màu đen hoặc trắng và là hỗn hợp của sucrose và glocose.

Độ đường đầu (OG): 15°P

Độ đường cuối (FG): 2.5°P

Độ đắng (BU): 20 BU

ABV: 7.6%

Nguyên liệu cho mẻ nấu 100 lít

  1. Weyermann Pale Ale: 12.92 kg
  2. Weyermann Abbey Malt: 3.97 kg
  3. Weyermann Carabelge: 1.49 kg
  4. Weyermann Munich: 1.49 kg

#Hops

Hop lần 1. Magnum: 17 gram

Hop lần 2. Tettnanger: 149 gram

Hop lần 3. Styrian Goldings: 99 gram

#Men: Lallemand Abbaye và Lallemand CBC-1

Quy trình nấu:

#Mash In: 67°C giữ 90 phút

Mash Out ở 76°C

#Sôi Hoa trong 120 phút

Hops số 1: Đun sôi 105 phút

Hops số 2: Đun sôi 20 phút

Hops số 3: Đun sôi 10 phút

Bổ sung đường 5 phút trước khi kết thúc

#Lắng Xoáy trong 30 phút

#Lên Men Chính ở 15°C – 21°C trong vòng 5-7 ngày tuỳ thuộc vào từng chủng men

Lên Men Phụ trong vòng 3-5 tuần ở 8°C – 10°C

Hoà tan 250 gram đường trắng với 2 lít nước nóng. Bổ sung vào bia và tái lên men với men mới (men Lallemand CBC-1)

Tiếp tục lên men trong tank kín trong vòng 1 ngày. Đóng chai.

Lên men tiếp tục trong chai trong vòng 3 tuần ở 21°C. Ủ bia trong chai trong vòng 3-4 tháng trong hầm tối ở nhiệt độ 10°C -15 °C
