Các thông số kỹ thuật nấu bia cho bia Abbey của Bỉ hay còn gọi là Trappist Ale rộng tới mức không thể phân loại được. Nồng độ cồn có thể thay đổi từ 4% – 12%; độ đường đầu từ 12.5°P – 25°P; độ đường cuối từ 2.5°P – 5°P. Màu sắc bia thay đổi từ vàng đậm sang đỏ sẫm.
Malt nền cho Abbey/Trappist thường là Pilsner hoặc Pale Ale Malt. Độ đắng của Dubbel có thể thay đổi từ 20 BU đến 45 BU, và hops dùng nhiều chủng loại: Đức (Tettnanger, Hallertauer Mittelfruh, Spalt hoặc Perle), Cộng hoà Séc (Saaz), và Slovenia (Styrian Goldings)
Thuật ngữ Dubbel (tiếng Flemish) hay Double (tiếng Pháp) – có nghĩa là hai lần- hay dòng bia Tripel có tên gọi là Tripel (tiếng Flemish) hay Triple (tiếng Pháp) – có nghĩa là ba lần. Dubbel/Double thường có màu hổ phách hay màu đồng trong khi Tripel/Triple thường có màu vàng.
Theo quyết định của toà án Bỉ, chỉ có 6 tu viện tại Bỉ và 1 trên đất Hà Lan – được phép gọi bia của họ là Trappist Ale – Bia Thầy Tu một cách hơp pháp. Các tu viện này lần lượt là: Achel, Chimay, Orval, Rochefort, Westmalle, và Westvleteren, và Brouwerij de Koningshoeven.
Tất cả các loại bia Abbey khác phải được ghi trên nhãn là Abdijbier (Flemish) hoặc Biere d’Abbeye (French) để phân biệt chúng với dòng bia Abbey làm bởi các thầy tu.

Hoà tan 250 gram đường trắng với 2 lít nước nóng. Bổ sung vào bia và tái lên men với men mới (men Lallemand CBC-1)
Tiếp tục lên men trong tank kín trong vòng 1 ngày. Đóng chai.
Lên men tiếp tục trong chai trong vòng 3 tuần ở 21°C. Ủ bia trong chai trong vòng 3-4 tháng trong hầm tối ở nhiệt độ 10°C -15 °C
